Description

So easy to fix and cook for a perfect medium-rare prime rib.

Ingredients

  • 6 pounds Standing Rib Roast
  • 2 Tablespoons Ground Black Pepper
  • 2 Tablespoons Your Favorite Seasoned Salt
  • 2 Tablespoons Garlic Powder

Preparation

Preheat oven to 500°. Mix your seasonings together and rub all over the roast. Place into a covered roaster, fat side down. Cover with the lid. Bake the roast for 6 minutes per pound of meat, then turn off the oven. DO NOT OPEN THE OVEN FOR TWO HOURS! After 2 hours, open the oven and uncover the roast. Check the temperature of the roast—if the reading is about 140°, it is done. If it is lower than 140°, place the cover back on and turn the oven back on to 375° until roast reaches 140°.

You will have a perfect prime rib roast. It will get rarer towards the center to suit any taste. Serve with your favorite side dishes and everyone will think your are a great chef!

I’m a believer now. I have never cooked prime rib this way before, but the results were terrific. Perfect med-rare on my 10lb roast. The only thing I did differently was the coating on the top of the roast. I used lots of chopped garlic mixed with dijon mustard, olive oil , rosemary, salt and pepper

Was really good , easy and foolproof. We dont like ours super rare in the middle so was good for us. Yummy will make again. The smell for hours was torture. It made us really hungry

It didn’t work for me! It was WAY overdone. Not sure what I did wrong but it was really disappointing.

This is exactly the prime rib roast recipe I was looking for! We used to make prime rib this way years ago and I remembered turning the oven off and letting it “cook” for 2 hours, but I couldn’t remember how long to cook it BEFORE turning the oven off! Thank you!!

Following this recipe produced a WAY over done rib roast, and I actually pulled it out of the oven at a hour and a half due to someone else saying that theirs was over done also. I like the concept of this recipe, but the time needs a major adjustment, or possibly the oven temperature need only be 400? Too expensive a piece of meat to be testing on, will try Alton Brown’s instead next time. Disappointed.
