A simple pasta with a quick creamy sauce. Not too unpredictable but tasty enough for any time of the day.
1. Cook pasta in very salty water until al dente.
2. Meanwhile, dice the sundried and fresh tomatoes. Don’t deseed the fresh ones.
3. With 2 tablespoons olive oil, panfry tomatoes until they begin to soften and release their juices.
4. Add garlic and fry until fragrant.
5. Add broth and simmer for about 5-10 minutes.
6. When the sauce has reduced and thicken slightly, add cooked meat and let it continue to simmer.
7. Once the pasta is done, pour the pasta into the sauce and add in the cheese.
8. Stir everything together until cheese has melted. Season with salt and pepper to taste.
9. If you like some sauce left, dish up immediately. If you want it drier, let it cool a little longer and dish up.
Note: This a very basic recipe. Fancify it with more vegetables or herbs or even a mixture of cheeses and meat.
