Description

A perfect and refreshing sandwich, and a great use of your homegrown tomatoes.

Ingredients

  • 4 whole Thick Slices Of Your Favorite Bread (I Used A Rosemary Boule)
  • 1 cup Mayonnaise
  • 1 bunch Fresh Italian Basil, Rough Chop
  • 1 whole Beefsteak Tomato, Cut Into Thick Slices
  • 1 teaspoon Sea Salt (or To Taste)
  • 1 teaspoon Cracked Black Pepper, Or To Taste

Preparation

To a small bowl, add the mayonnaise and chopped basil leaves, and mix. Set aside. When you are ready to make the sandwich, lather each slice of the thick cut bread with the mayonnaise and basil mixture. Lay two tomato slices down on the mayonnaise and season generously with salt and pepper. Take the other slice of bread, and with the mayonnaise side down, place it on top of the tomatoes.

That’s it. I know it sounds dorky, but a plain tomato sandwich like this with a bit of basil mayonnaise just screams summertime. Enjoy.

Our tomatoes are coming in and I just ate a big tomaoto sandwich. It was wonderful!

My Mom and I used to eat tomato sandwiches for lunch! We’d pick the tomatoes out of our garden, and we had to have fresh white bread, real mayo, salt and pepper, and occasionally a slice of onion. My mouth is watering right now!

Try adding some fresh mozzerella and fresh avacado – YUM!

When I was a little girl, I LOVED tomato sandwiches, like this, but with plain old Hellman’s mayo and Pepperidge Farm bread. While my friends were setting up lemonade stands, I begged my mother to let me have a tomato sandwich stand. She patiently explained to me that not everyone liked the same things we did. I suspect she didn’t want all her homegrown tomatoes used for this project, either!

Yum! I LOVE tomato sandwiches. Adding the basil to the mayo sounds delightful! I will have to try that when my tomatoes ripen.
