Description

The surprising combination of avocado, strawberries, and Gorgonzola cheese makes for a fresh and delicious wrap!

Ingredients

  • Raspberry Vinaigrette Dressing Or Marinade
  • Chicken
  • Tortillas
  • Lettuce, Washed And Torn
  • Avocado, Sliced
  • Strawberries, Sliced
  • Gorgonzola Cheese, Crumbled
  • Candied Pecans, Chopped
  • Red Onion, Thinly Sliced

Preparation

Marinate the chicken in the raspberry vinaigrette and then grill chicken until cooked thoroughly. When chicken is cool enough to be handled, shred it into bite sized pieces.

To assemble each wrap, top a tortilla with lettuce, chicken, avocado, strawberries, Gorgonzola, pecans, and red onion.

Roll it up, and enjoy!

Glad you liked them, AMC! I love the idea of using spinach wraps…and mine always fall apart, too…I keep a fork nearby!

OMG!! these are amazing! I made them today for a luncheon on spinach wraps and also put a little mayo in there. My guests thought they were delicious!! the only thing is there was so much stuff on them they fell apart… still worth it! thanks for sharing!

This looks AWESOME!! I can’t wait to try it for a luncheon next week!! Like Trish said I want to try using spinach wraps to see what that’s like.

Oh my my my a definite lunch next week! Glad I caught this before I went shopping tomorrow morning! I might be venturous and try different tortillas. Have you tried any besides the plain ones?

Very yummy! I love all the summer, light flavors they went together so well!!!

I tried it w/ gorgonzola and w/out gorgonzola and it is great both ways! Would be wonderful with feta too!

One change I did do was instead of marinating the chicken I steamed it and then used rasberry vinaigrette dressing on the top of everything, yummo!
