Like a delicious mini meatloaf stuffed into a zucchini!
Preheat oven to 350ºF.
Cut the zucchini in half lengthwise. With a spoon, scoop out the seeds. Chop and reserve the seeds for the stuffing. In a medium bowl, mix together the ground beef or sausage, onion, garlic powder, bread crumbs, egg and the reserved zucchini seeds. Place the meat mixture equally into the zucchini halves; mixture should be piled up over the top.
Place the filled zucchini halves into greased 13×9 baking dish. Top with marinara sauce. Bake uncovered 45 minutes. Cover with Parmesan cheese and put under the broiler for a minute or two until golden brown.
Serve with mashed potatoes.
