These are SO easy to make and they taste yummy, too.
Preheat oven to 350 degrees.
Thaw and drain the spinach. Add sour cream, cheese and garlic and mix salt and pepper to taste.
Pound out the chicken breast thin, or cheat like I do and buy the already thin cut chicken. Put about 2 tablespoons of the spinach mix in the center of each breast and roll it up. (I sometimes like to sprinkle a little pepper jack cheese right on top of the spinach mix before rolling it up.)
Cook your bacon for about 3 minutes in the microwave, just to start the cooking process. Remove and cut in half and lay over the top of each breast.
Place in a baking dish and bake at 350 degrees for 20-30 minutes.
We love having this served with basmati rice and corn. If you have leftover spinach mixture, you can always freeze that for use later.
