Description

This has amazing flavor and with the variety of peppers it makes for a deliciously moist, filling meal!

Ingredients

  • 6 whole Bell Peppers (I Like Red, Green, Orange And Even Yellow)
  • 1 pound Ground Beef Or Ground Turkey
  • 1 cup Cooked Rice (Use Whole Grain, Not The Instant Stuff)
  • 2 cups Bread, Torn Into Small Pieces
  • ½ cups Onion, Chopped
  • 1 whole Egg
  • 1 can Tomato Sauce (12 Oz. Can)
  • Salt And Pepper
  • ½ cups Ketchup
  • 2 Tablespoons Brown Sugar
  • ½ teaspoons Dry Mustard

Preparation

Preheat oven to 350ºF.

Cut open the top of each bell pepper and clean out the insides. Rinse the inside of the peppers and set aside to dry.

In a medium sized bowl combine the ground beef or turkey with the cooked rice, bread, chopped onion, egg, tomato sauce and some salt and pepper until well combined.

Stuff meat sauce into each pepper leaving about 1/4″ to 1/2″ clearance on top for the sauce. Place the peppers into a baking dish in an upright position.

In a small bowl combine the ketchup, brown sugar and ground mustard until well mixed. Spoon mixture on top of all the peppers and spread evenly.

Bake at 350ºF for 30 minutes or until meat is browned (and reaches internal temperature of 160 degrees for ground beef, 165 degrees for ground turkey) and peppers are soft. Enjoy!
