Description

Spicy green bell peppers stuffed with ground beef, rice and hot cherry peppers. This is a spicy twist on the original.

Ingredients

  • 4 whole Green Bells Peppers
  • 1 pound Ground Beef
  • 1 cup Uncooked White Rice
  • 1 jar (16 Oz. Jar) Hot Cherry Peppers
  • 6 Tablespoons Butter
  • ¼ Tablespoons Onion Powder
  • ⅛ Tablespoons Oregano
  • 28 ounces, weight Can Of Crushed Tomatoes
  • 1 can (6 Oz. Can) Tomato Paste
  • 1 gallon Tomato Juice

Preparation

1. Cut the tops off of the green bell peppers, removing the seeds.
2. Take the cherry peppers out of the jar and cut off the stems. Slice each cherry pepper in half and discard stems. Set cherry peppers aside.
3. Place meat into a large mixing bowl.
4. Melt butter and add to the meat.
5. Add uncooked rice and spices to the meat and butter.
6. By hand, combine all ingredients in the mixing bowl.
7. Stuff equal amounts into each green bell pepper, being careful to fill each pepper without leaving air pockets.
8. In a large pot, combine crushed tomatoes, tomato paste and cherry peppers.
9. Place stuffed peppers in a pot.
10. Pour tomato juice over the peppers to cover the peppers.
11. Sprinkle with salt and pepper and cook over low heat for 1 hour.
