Description

You have to try this! Use chicken breast if you’re preparing dinner for the family or spice it up a little extra and make wings for your man – he’ll really love you!

Ingredients

  • 2 pounds Chicken Breast Or Wings
  • 2 Tablespoons Olive Oil
  • 2 teaspoons Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Chili Powder
  • ½ teaspoons Cinnamon
  • ½ teaspoons Cumin
  • 1 cup Packed Brown Sugar
  • 1 head Garlic, Finely Minced
  • 2 Tablespoons Red Pepper, Finely Minced
  • 2 Tablespoons Jerk Sauce Or Tabasco

Preparation

Preheat oven to 350 f.

Rinse chicken and pat dry.

Heat 1 tablespoon of olive oil in a skillet over med/high heat.

In a small bowl, combine salt, pepper, chili powder, cinnamon, and cumin. Rub this mixture all over the chicken.

When the oil is very hot, almost smoking, throw your chicken in and sear on both sides. This usually takes about 10 minutes total.

In another bowl, mix brown sugar, garlic, pepper, and hot sauce to form a paste.

When the chicken is nicely browned on both sides, toss it into a greased baking dish and scoop the garlic/sugar mixture on top of the chicken. It doesn’t have to be perfect, as long as it’s on there somewhere…the oven with do the magic.

When that’s done, throw it in the oven and leave it for 45 minutes.

Remove from the oven, when the chicken is bubbling over with the glaze and serve.

(I like them when they’ve cooled for about 15 minutes and the glaze get’s really sticky.

We’ve made this recipe, both mild and hot, so don’t be shy – experiment a little with the spices types/amounts.

Enjoy!

The whole family loved it! Husband even liked it and he’s not a big chicken fan. I added about a tsp I’d dried red pepper flakes in place of the red pepper and left out the Tabasco so the kids would eat it.

My husband LOVES this recipe! He wants me to just make the sauce and can it so he can put it on everything else he loves!

As far as the red pepper, I think she means (and I used) red pepper seasoning. (Also known as Cayenne) I used the fine stuff, which is pretty intense, so only a shake or two and we had plenty of heat. If the sauce is too sweet for you, use a couple shakes of the cayenne and it will definitely balance it out.

Finally got to make this, but had lots of missing ingredients! I, too, like some others.. wasn’t sure of what type of red pepper you meant, as well as the whole clove of garlic as well. However, this recipe proved fabulously adaptable and DELISH!

I substituted garam masala for the chili powder/cinnamon/cumin/pepper. I did still put a bit of salt in there, however. I also did not have any red pepper to finely mince, or tobasco sauce, so I used sirachi pepper sauce. I did use an equivalent of a whole head of garlic..was too much for family (not me, tho!).

I was really surprised by how much I liked this. I used Frank’s hot sauce b/c I didn’t have Tabasco and it had some really nice heat. I’ll definitely be making it again as it goes well with brown rice and veggies. I was also confused re: sweet red pepper or spicy pepper.

I was a little apprehensive about making this chicken because of the seemingly odd combination of ingredients. I only made it because I was desperate for something to cook, but I’m so glad I did! I only had drumsticks and thighs so that’s what I used. I doubled the recipe but used about about 1 3/4 C of brown sugar instead of 2 cups. I used Walkerswood Jerk Seasoning because I had no Tabasco or other hot sauce and it was plenty spicy. I omitted the red pepper because I had no idea if it meant sweet pepper or hot pepper. I found that the chicken seared in about 6 minutes, but I did everything else as stated. It was soo delicious! It was the perfect combination of sweet and spicy. I will definitely be making it again. Thank you so much Tracy!
