Description

A delicious chicken recipe. It smells soooo good while it’s cooking!

Ingredients

  • 2 teaspoons Salt
  • 1 teaspoon Cayenne Pepper
  • 1 teaspoon Paprika
  • 2 teaspoons Garlic Powder
  • 1 teaspoon Thyme
  • 1 teaspoon Fresh Spices (rosemary, Oregano, Etc.) - 1 Teaspoon Each
  • 1 teaspoon Fresh Black Pepper
  • 1 whole Large Roasting Chicken
  • 1 cup Chopped Onion

Preparation

In a small bowl, thoroughly combine all of your spices. Remove giblets from chicken, clean the cavity well and pat dry with paper towels. Chop onion. Rub the spice mixture into the chicken, both inside and out, making sure that it is evenly coated and down deep into the skin. Add some onion to the bottom of the crock pot….add remaining onion to the inside of the bird. When ready to cook the chicken place it in the slow cooker BUT DO NOT ADD ANY LIQUID. As the cooking process goes along it will produce it’s own juices. Cook on LOW for 8 to 10 hours and it will be falling off the bone tender.

Oh my goodness is this every good and tasty! Sent the recipe to my daughter and college son and we all have fixed it! Great recipe – we all stocked up on chickens after making this. Very versatile as well – -just change the herbs and you have a different flabvor!

You’re right this smelled so amazing when I walked in the house after work. It cooked on low for 10 hours and I think that was too long as the chicken itself was kinda dry and once you got past the skin the spices didn’t penetrate. Loved the spice combination and will definitely try again for less time and will do a better job of getting the spices under the skin. If I can master the crockpot timing, this will be a go to dish as it’s so quick, easy and nothing fancy in the ingredient list. Thanks!
