Description

What happens when a steak marinade hangs out in the slow cooker …

Ingredients

  • 1 whole Beef Roast, 1 1/2 To 2 Lbs.
  • ½ teaspoons Salt
  • ½ teaspoons Coarsely Ground Black Pepper
  • ½ cups Beef Broth
  • ¼ cups Soy Sauce
  • 4 cloves Garlic, Chopped
  • ½ teaspoons Crushed Red Pepper Flakes
  • 2 Tablespoons Freshly Squeezed Lemon Juice

Preparation

Place roast (thawed or frozen) in a 2.5 to 4 qt. slow cooker, and season with salt and pepper. Add remaining ingredients (except the lemon juice) over the beef. Cover and cook on low for 8 to 10 hours. Sprinkle with lemon juice, shred into large chunks, and remove from the slow cooker. Serve beef and juices over mashed potatoes, rice, or noodles.

If you wanted to make shredded beef sandwiches, just take the beef out a little early, shred it, return it to the slow cooker and cook for another 20 to 30 minutes.

Note: This recipe was inspired by my parents’ steak marinade. To use this as a marinade, simply omit the beef broth and add a couple tablespoons of olive oil.

mkapusta – I’m sorry it was dry! Do you think your slow cooker cooks too hot? I have one that cooks really hot (even on the low setting) and I have to really keep an eye on it so things don’t stay in there too long and dry out. I even used grass-fed beef, which usually has a lower fat content, and it was still pretty moist. I would maybe borrow someone else’s slow cooker to see if you get different results. I’m glad you liked the flavor though!

The flavor was incredible, but mine turned out dry :-( I’ve always had trouble with roast in the crock pot, was hoping this time would be different….any tips…maybe I should use a better cut of meat or get a new crockpot?

Everyone in my house hold loved this – the room mate said it was the best he’d ever had! We’ll be making this whenever we have roast from now on.

This is SO good! The lemon really makes it I think. I made a twice baked potato sort of casserole dish to have with it and OH MY! YUMM! We will certainly be making this again!

I made this for dinner tonight and it was fabulous!!!! I followed the recipe exactly except I thickened the juice with some flour to make gravy. Served with mashed potatoes. I used low sodium everything and it was just right. We will make this over and over.

This was delicious, meat was tender & flavorful. I do have to say though, that it was borderline salty. I did not salt the meat beforehand. Next time I’ll use less sodium soy sauce. I will def make this again.

I love this roast; it’s a little different take on traditional pot roast. I’ve made it for a few men in my life and it always gets rave reviews. Definitely a keeper and something I go to when I want a “no-fail” meal. Thanks for sharing.

I made this yesterday and it was wonderful! I’ve had trouble cooking roasts in the crock pot in the past, but this came out perfectly. I served it with mashed potatoes and my whole family loved it. I will be making this again for sure!
