Ingredients

  • 1 box Jiffy Cornbread Mix (8 Ounce Box)
  • Additional Required Ingredients Specified In Mix Package (typically Milk And Egg)
  • 16 ounces, weight Jimmy Dean Hot Sausage (mild If You Don't Like Spicy)
  • 1-½ stick Butter
  • 6 whole Squash Sliced
  • 1 whole Bell Pepper, Chopped
  • 1 whole Onion, Chopped
  • 8 ounces, weight Mexican Velveeta Cheese, Grated
  • 1 dash Salt And Pepper, to taste

Preparation

Bake Jiffy Cornbread Mix according to directions. Combine the mix with additional required ingredients specified in mix package (typically milk and egg – but check the package to make sure). Bake according to package instructions. When cornbread is done, crumble up in a large bowl.

Brown sausage in a skillet over medium-high heat and drain grease. Add the sausage to the crumbled cornbread.

Put butter in a large pan and melt it. Add squash, bell pepper and onion to the butter.

Add cooked squash mixture to your cornbread mixture. Squash will make a juice, make sure you have enough juice when you add it to the cornbread mixture so it is not dry. Add cheese to the cornbread mixture and mix all together. Your mixture shouldn’t be real juicy, but should be somewhat mushy. Bake this at 350 degrees until the cheese is melted and is brown.
