Description

This is quick and easy-to-assemble, yet packed with flavor. You can use store-bought, prepared ingredients (pesto sauce and Alfredo sauce) or make your own for a more elaborate dish.

Ingredients

  • 1 package Fresh Baby Spinach (6 Oz), Thoroughly Washed
  • ½ cups Pesto Sauce
  • 2 cups Alfredo Sauce (1 15-oz Jar Of Prepared Sauce)
  • ¼ cups Vegetable Broth
  • 1 package Frozen Cheese-filled Ravioli -- Do Not Thaw! (about 25 Oz.)
  • 1-¼ cup Shredded Cheese -- Italian 6-cheese Blend
  • ¼ cups Grated Parmesan Cheese

Preparation

Preheat oven to 375 degrees.
Lightly grease a baking dish (about 2-qt capacity or 11″-x-7″)

Chop spinach. Toss with pesto in a medium bowl.
Combine Alfredo sauce and broth.

Spoon one-third of Alfredo sauce mixture (about 1/2 cup) into prepared baking dish. Top with half of spinach mixture. Arrange half of frozen raviolis in a single layer over spinach mixture. Top with half of remaining Alfredo sauce (about 1/2 cup). Repeat layers of remaining spinach and raviolis. Top with remaining Alfredo sauce.

Bake uncovered at 375 degrees for 30 minutes.

Remove from oven and sprinkle with shredded cheese and Parmesan cheese. Return to oven and bake for 5-10 minutes more, or until cheese melts on top and dish is hot and bubbly.

this was really good, even though it was a bit bland.

i used tortellini instead of ravioli and used all the spinach i had in the house, which i think was more than 6 oz. the spinach, if chopped finely enough (i used food processor), is indistinguishable from the pesto. great to be able to sneak some veggies past my 15 yr old son!

you could probably cut back on the alfredo by about a third and add more italian blend cheese instead. still, very quick, easy, and satisfying.
