Description

My favourite lunch! A delicious salad with a light dressing stuffed into a warm pita. Chopping up the ingredients takes a bit of time, but it is well worth it. Healthy and super yummy!

Ingredients

  • 1 bunch Fresh Spinach
  • ½ whole Chopped Gala Apple
  • ⅛ cups Chopped Red Onion
  • ¼ cups Chopped Goat Cheese
  • ½ whole Chopped Avocado
  • ½ whole Tomato
  • ⅛ cups Dried Cranberries
  • ⅛ cups Sliced Almonds
  • 3 Tablespoons Extra Virgin Olive Oil
  • 1 Tablespoon Red Wine Vinegar
  • 1 teaspoon Dijon Mustard (optional)
  • 1 dash Salt
  • 1 dash Pepper
  • 2 whole Whole Wheat Pitas, Warmed

Preparation

Chop spinach, apple, red onion, goat cheese, avocado and tomato, and place in a large mixing bowl. Add dried cranberries and almonds. Toss to mix.

Mix olive oil, red wine vinegar and dijon mustard (mustard is optional) in a small jar. Add a dash of salt and pepper, and shake together. Adjust olive oil and vinegar to your taste.

Pour desired amount of dressing over the mixed salad. Any leftover dressing can be stored in the refrigerator for a few days. Toss to coat.

Warm pitas. Cut in half, and stuff with salad mixture.

I made this last night and it was yummy! I didn’t have any red wine vinegar, so I just used regular salad dressing, and it still tasted great!

YUM!!! I make a very simlar salad all the time, but have never put it into a pita – thanks fo the idea!!
