Description

Layers of pasta, meat, sauce, cheese and spinach. Mmm.

Ingredients

  • 10 ounces, weight Fresh Spinach, Stemmed And Washed
  • 2 Tablespoons Olive Oil
  • 3 cloves Garlic, Pressed
  • 1 pound Ground Beef
  • 1 pound Bulk Italian Sausage (no Casings)
  • 1 cup Ricotta Cheese
  • ¾ cups Cottage Cheese
  • 2 cups Mozzarella Cheese, Divided
  • ½ cups Parmesan Cheese
  • 2 whole Eggs
  • ½ teaspoons Kosher Salt
  • 5 whole Cranks Black Pepper
  • ¼ cups Fresh Parsley, Chopped
  • 8 cups Spaghetti Sauce
  • 1 box (13.25 Oz. Size) Lasagna Noodles, Cooked According To Package Directions

Preparation

Saute spinach in olive oil with pressed garlic until wilted; set aside. Brown beef and sausage until fully cooked, drain grease.

In a small bowl, mix ricotta cheese, cottage cheese, 1 cup mozzarella cheese, parmesan cheese, eggs, salt, pepper, and parsley. Set aside.

In a 13×9 baking dish, pour 2 cups of sauce in the bottom of the pan. Lay cooked noodles in a single layer. Cover with 2 cup of sauce, 1/2 of meat, and half of cheese filling. Top with 1/2 of spinach mixture. Repeat layer of noodles, sauce, meat, cheese and spinach. Top with layer of noodles and remaining sauce. Sprinkle with remaining 1 cup mozzarella cheese.

Cover with foil. Bake in a 350ºF oven for about 45 minutes. Remove foil and bake an additional 10-15 minutes. Let stand 10 minutes before serving. Yum!
