Description

A play on the popular spinach and lemon orzo soup. This one is perfect for summertime!

Ingredients

  • FOR THE CHICKEN:
  • 1 whole Lemon, Juiced
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 3 Tablespoons Lea & Perrin's Chicken Marinade
  • 1-½ pound Boneless, Skinless Chicken Breasts
  • FOR THE ORZO:
  • 2 cups Chicken Stock
  • 1 cup Orzo
  • 2 Tablespoons Olive Oil
  • ½ whole White Onion, Chopped
  • 2 cloves Garlic, Chopped
  • ½ whole Jalapeno, Chopped
  • 3 stalks Celery, Chopped
  • 1 cup Fresh Spinach, Packed
  • 1 whole Lemon, Juiced And Zested
  • 1 teaspoon Garlic Salt
  • ½ teaspoons Pepper
  • 1 Tablespoon Italian Seasoning Spice Blend

Preparation

For the chicken, combine the lemon juice, salt, pepper, and chicken marinade in a small bowl and whisk to combine. Put the chicken in a large bowl. Pour the marinade mixture over the chicken, put it in the refrigerator and let it marinate for at least 3 hours.

Remove thicken from the marinade. Heat a grill pan over medium high heat, add chicken and cook chicken breasts for about 6 minute per side or until cooked through.

While chicken is cooking, prepare the orzo. Bring chicken stock to a boil, then add in the orzo. Return to a boil, then let it simmer until liquid has been absorbed, about 10 minutes.

In a separate large skillet, warm olive oil over medium high heat. Add onion, garlic, jalepeno and celery. Cook until onion is translucent, about 4 minutes. Then add spinach to the skillet and let it simmer with the other ingredients. Once chicken and orzo are cooked, add them to the skillet and stir together cooking over medium heat for about 3 minutes. Add in lemon juice, lemon zest, garlic salt, pepper and Italian seasoning blend. Adjust spices to taste and serve.

Great recipe! The only change I would ask you to make is to amend the prep time – I was planning to make this as a quick dinner one night because of the 5 minute prep time listed, but had to change plans because the first step says to marinate the chicken for 3 hours! Other than that, GREAT recipe!
