Description

Chicken breasts stuffed with spinach and cheese is easy enough to make for a weeknight dinner.

Ingredients

  • 2 whole Chicken Breasts (skinless And Boneless)
  • 4 ounces, weight Monterey Jack Cheese, Shredded
  • 2 cups Fresh Spinach, Chopped
  • 1 Tablespoon Olive Oil, Plus More For Brushing
  • Kosher Salt
  • Pepper
  • Granulated Garlic

Preparation

Cut a deep, 2-inch wide pocket in the thickest part of each chicken breast. Stuff with cheese and spinach. Brush chicken with olive oil and season with salt, pepper and granulated garlic.

Heat 1 tablespoon olive oil in a frying pan over medium heat. Cook chicken until browned and the thickest part of the breast is 155ºF, about 5–7 minutes per side.

We all really liked this! We did have trouble keeping the cheese in the chicken on 2 of them so I may use toothpicks next time to keep it all closed.
The other 2 were awesome!! I think the chicken itself needs a little something extra and some bacon would be really yummy with it too.
We made the veggies as well and those were so delicious!
