Description

Pasta in a spinach-y sauce, a delicious way to get your day’s fix of greens.

Ingredients

  • 2 cups Pasta (fusili)
  • 2 bunches Spinach Leaves
  • 1 bulb Onion
  • 2 teaspoons Olive Oil
  • 1 Tablespoon Milk
  • 1 Tablespoon Cream
  • 1 Tablespoon Cream Cheese
  • ½ teaspoons Salt

Preparation

Add the pasta to a pan of boiling salted water to which a few drops of oil has been added. Cook according to the package instructions.

While the pasta cooks, blanch the spinach: take clean spinach leaves, remove steams. Bring water to a rolling boil and plunge the spinach leaves into it. After two minutes, take the spinach out and transfer to chilled water. You’ll see the green of the spinach turn a beautiful rich shade.

Blend the boiled spinach to a paste.

When the pasta is cooked, drain and run cold water run over it so that it doesn’t cook further. Keep aside for later use.

Make the sauce. Chop the onion finely. Heat a teaspoon of oil in a non-stick pan. Add the onions. Stir fry till the onions turn golden.

Pour in the spinach paste. Cook for 5 minutes. Add the milk, cream and cream cheese. Mix well. Add salt if needed—you may need very little if your cheese is salted.

Finally, put in the boiled pasta. Toss and cook a further minute till the green, thick sauce coats the pasta evenly. Dig into it while hot!

A hit here! I added a cup of cheddar cheese, onion powder and garlic powder just to add more flavor. The kids loved it. What a great way to get them to eat a little greens.

This was a great idea but for my personal taste seemed to lack some serious flavor. I love, love, love the blended up spinach (it was so pretty I wanted to take a picture!) but it needed a lot of extra oomph (again, personal preference). I ended up adding about double the cream cheese, some grated mozzarella, garlic, a ton of pepper, salt, and a few dashes of cayenne. My husband still said it needed some more flavor. My kids thought it was ok and called it Spinach Mac & Cheese so I will probably make it again but work with the flavors more.
