Description

Spiedini alla Salsiccia (sausage, cherry tomato and basil kebabs glazed with balsamic & fig preserves).

Ingredients

  • 19-⅞ ounces, weight Italian Sausage Links, Cubed
  • 16 whole Cherry Tomatoes
  • 1 bunch Fresh Basil Leaves
  • 1 Tablespoon Canola/vegetable Oil - Or Enough To Lightly Brush Basil Leaves
  • 6 Tablespoons Fig Preserves
  • 2 Tablespoons Balsamic Vinegar

Preparation

1. Prior to grilling, soak your wooden skewers in water for a minimum of an hour, to avoid them catching on fire. If you’re using metal skewers, obviously you can skip this step.

2. When your skewers are ready, slice the sausages into roughly 1″ sections. Assemble the skewers by placing a piece of sausage, a cherry tomato, a piece of basil. Continue this pattern two additional times per skewer. Continue assembling until all skewers are done. Lightly brush the basil leaves with canola or vegetable oil to keep them from burning.

3. Place kebabs onto your hot grill and cook until sausages are brown, turning as necessary. Transfer cooked kebabs onto s serving tray. Set aside to rest.

4. WHILE the kebabs are resting, into a small saucepan, add fig preserves and balsamic. Stir to combine and cook over low-medium heat until it reaches a nice smooth consistency. Baste sauce over the tops of kebabs prior to serving.

We just finished eating this, and it was delicious! I added red bell pepper because we had one that needed to be used.. super tasty! Don’t be afraid of the fig preserves… I had to go to a specialty store to find them, but mixed with the balsamic, you couldn’t tell they were figs, just that it was a tasty, sweet glaze. BRAVO!

Delicious! My family loved it — not a bit was left. We were talking about making another batch for dinner later in the week before we even finished dinner the night I made it.

Absolutly delicious! I made this dish with veggy sausage from Trader Joes. Instead of grilling it I cooked the sausage in a skilled with some bell peppers, and served it over pasta. Just to die for. I made it 4 nights in a row until I ran out of sausage.
