Description

Simple, light and tasty shrimp tacos. Enjoy one with a margarita!

Ingredients

  • ¼ cups Tequila
  • ¼ cups Lime Juice
  • 2 Tablespoons Cholula Hot Sauce, Adjusted For Spice Preference
  • 2 cloves Garlic, Minced
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • 1 Tablespoon Olive Oil
  • 1 pound Shrimp, Peeled, Deveined And Tails Removed
  • ½ whole Onion, Sliced
  • 1 package Flour Tortillas Or Your Favorite Taco Shell, 8-10 Count
  • 1 whole Tomato, Diced
  • 2 whole Avocados, Peeled, Pitted And Diced
  • Garnishes: Salsa And Shredded Cheddar Cheese (optional)

Preparation

In a medium sized bowl, mix together tequila, lime juice, hot sauce, garlic, salt, pepper and olive oil to make shrimp marinade. Add shrimp and marinate it in the refrigerator for about 30 minutes.

Preheat a grill pan to medium high heat (you can of course use a real grill, but just place the shrimp on skewers if you do). Once the pan is pre-heated place shrimp and the sliced onions on the grill pan, pouring some of the marinade over the top. Cook shrimp until they are opaque and cooked through, rotating once. It should be about 7 minutes. Remove shrimp from grill pan and let the onions cook a few more minutes.

Assemble tacos by topping a tortilla with shrimp, tomatoes, avocados, onions and a little more hot sauce if you want more heat. Garnish with shredded cheese and salsa if desired. Enjoy!
