Description

Delicious tasting Mexican-style seasoned chicken, perfect for using in tostadas (recipe coming soon to my recipe box), tortilla soup (recipe coming soon to my recipe box), chicken tacos or nachos. As soon as I tried this I wished I had doubled the recipe. Yum.

Ingredients

  • 1 whole Lime
  • 1 pound Boneless Skinless Chicken Breast
  • ½ cups Beer (I Used Budweiser)
  • ½ cups Zing Zang Bloody Mary Mix
  • 1 teaspoon Good Quality Cayenne Pepper
  • 1 teaspoon Good Quality Chili Powder
  • ½ teaspoons Cumin
  • 1 pinch Oregano

Preparation

Preheat your grill to 350 – 400 degrees.

Juice the lime.

Combine all ingredients in a glass baking dish.

Place on the grill (in the baking dish), uncovered, and cook until chicken is cooked through, turning occasionally (it took about 20 minutes).

Shred cooked chicken with two forks, tossing it in the juices.

Place chicken (in the baking dish still) back on the grill to keep warm and moist until you need it (or so that you don’t just eat it right out of the pan).

I used your chicken recipe for making chicken nachos. A summer shower came so I could not use the grill, instead I doubled the liquids (beer and bloody mix) and cooked the chicken in the crock-pot. It was delicious. Thanks!
