Description

This Spicy Sausage Black Bean Pasta uses normal pantry staples, making this the perfect one pan, thirty minute meal! And it happens to be gluten free!

Ingredients

  • 1  Link Johnsonville Andouille Sausage
  • 1 whole Small Onion, Chopped
  • 1 Tablespoon Olive Oil
  • 1 can (15 Oz. Size) Black Beans, Drained And Rinsed
  • 1 can (10 Oz. Size) Rotel, Undrained
  • 1 can (15 Oz. Size) Tomato Sauce
  • 1 cup Water
  • 2 cups Dry Rotini Pasta (I Used Barilla Gluten Free Pasta)
  • 1 package (1 1/4 Oz. Size) Taco Seasoning
  • 1 cup Cheese, Divided
  • 2 Tablespoons Chopped Green Onions

Preparation

Thinly slice sausage and finely chop the onion. Set aside.

Heat olive oil in a large skillet over medium heat. Add the sausage and onion and saute until lightly browned, stirring occasionally (3-4 minutes).

Add the drained and rinsed black beans, Rotel and tomato sauce. Stir in water, dry pasta, and taco seasoning. Cover skillet and reduce heat to medium low. Let the mixture simmer for 12-15 minutes, stirring occasionally.

When pasta is tender, stir in 3/4 cup of cheese. Top with remaining 1/4 cup cheese and place lid back on pasta just until cheese melts. Top with chopped green onions.
