Creamy spicy peanutty sauce with a quick chicken, veggie and pasta stir-fry.
Cook pasta according to package directions. In a small bowl, whisk the sauce ingredients together, set aside.
In a large skillet or wok, heat the olive oil over medium-high heat. Add garlic, broccoli, mushrooms and green onions. Stir fry until the mushrooms are tender and the broccoli softens.
Stir in the chicken, the sauce, half of the peanuts, and the pasta. Stir until combined and cook 1-2 minutes, until the sauce is heated through and thickens slightly.
Garnish with additional peanuts.
Note: this could easily be made vegetarian by omitting the chicken and adding edamame and/or tofu for added protein.
