Description

Want a fun, quick dinner to make for your other half? If you like shrimp and can handle some heat with a spritz of citrus, then this recipe is for you!

Ingredients

  • 1 Tablespoon Butter
  • 2 cloves Garlic, Minced
  • 1 whole Medium Onion, Chopped
  • 1 whole Jalapeno, Cored And Minced
  • 1 teaspoon Red Pepper Flakes
  • ½ teaspoons Oregano
  • 2 whole Roma Tomatoes, Chopped
  • ½ pounds Raw Shrimp, Deveined And Cleaned
  • 4 Tablespoons Lime Juice (or The Juice Of 1 Lime)
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • ¼ cups Spinach

Preparation

1. Melt the butter in a large pan over medium-high heat.

2. Saute the garlic, onion and jalapeno until onion is translucent (about 3-4 minutes).

3. Add red pepper flakes and oregano, stirring frequently for an additional 3 minutes.

4. Stir in tomatoes, shrimp, lime juice, salt and pepper. Cover the pan and cook for 2 minutes until shrimp turns pink.

5. Add spinach to the top of the shrimp mixture, stir, cover and cook for an additional 3-4 minutes.

6. Serve by itself or with brown rice.
