Description

A spicy and surprising alternative to plain old grilled chicken.

Ingredients

  • 4 pieces Boneless, Skinless Chicken Breasts
  • ⅓ cups Lime Juice
  • 2 Tablespoons Olive Oil
  • 1 teaspoon Chili Powder
  • ½ teaspoons Garlic Salt
  • ½ teaspoons Cumin
  • 1 dash Salt And Pepper
  • 4 whole Diced Tomatillos
  • ¼ cups Chopped Cilantro
  • ¼ cups Bell Pepper (Any Color You Choose)
  • 1 whole Fresh Jalapeno (Seeded, Minced)
  • 2 Tablespoons Pine Nuts
  • 2 Tablespoons Lime Juice
  • 1 teaspoon Sea Salt

Preparation

Combine 1/3 cup lime juice with olive oil, chili powder, garlic salt, cumin, salt and pepper to make marinade. Marinate the four chicken breasts for at least 30 minutes in this mixture.

Combine the diced tomatillos, cilantro, bell pepper (I like yellow, but any will do), jalapeno, pine nuts, lime juice and sea salt to make a fresh salsa. You can also add garlic if the mood strikes you.

Grill marinated chicken breasts and top with the fresh salsa. This is a pretty spicy dish, but very flavorful, and the spice can be toned down by using green chilies instead of a fresh jalapeno, and reducing the amount of chili powder.
