Description

I make this sandwich whenever I’m on the run or tired from a long day’s work. It requires very few ingredients which makes it cost effective and quick to prepare.

Ingredients

  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 Tablespoon Unsalted Butter
  • 1 whole Large Onion, Thinly Sliced
  • 4 whole Spicy Italian Sausage Links, Cut Into 4 Inch Slices (Johnsonville, Hillshire Farm Or Other Brands)
  • 1 whole Green Bell Pepper, Core And Seeds Removed, Thinly Sliced
  • 1 whole Red Bell Pepper, Core And Seeds Removed, Thinly Sliced
  • ¼ cups White Wine (optional)
  • 1 whole French Baguette (or Other Type Of Baguette Or Focaccia Is Also Fine)
  • Salt And Pepper, to taste

Preparation

Preheat oven to 350 F.

In a large pan over high heat, add the oil, butter and onions and cook for 3-4 minutes, until onions are translucent. Add the sausages and cook for 2 minutes. Add the peppers and cook for 2 minutes. Then add wine (if using) and cook for another 5-7 minutes, until peppers are soft and caramelized. If you are not using wine, do the same thing but lower the heat to medium and add 2-3 tablespoons of water or stock.

While the sausages and peppers are cooking, slice the baguette in half lengthwise, then into 4 equal sandwich-size pieces (to make 4 sandwiches). Lay them on a sheet tray and toast in the oven for about 5-7 minutes, until they are a little golden and crispy on the outside but still soft on the inside.

When the sausages and peppers are fully cooked and caramelized, turn the heat off and season with salt and pepper. Make your sandwiches by topping the bread with the onion and sausage mixture and serve immediately.
