Description

Simple, healthy and absolutely delicious. A tasty shrimp dish with a kick!

Ingredients

  • 2 Tablespoons Olive Oil
  • 4 cloves Garlic, Minced
  • 2 cups Broccoli Florets
  • 2 teaspoons Low Sodium Soy Sauce
  • 1 teaspoon Sriracha
  • 1-½ pound Shrimp, Peeled And Deveined
  • 5 ounces, weight Soba Buckwheat Noodles, Cooked According To Package Directions
  • 3 whole Scallions, Sliced
  • Sesame Seeds, For Garnish
  • FOR THE SAUCE:
  • 3 Tablespoons Sriracha
  • ¼ cups Low Sodium Soy Sauce
  • 1 Tablespoon Rice Wine
  • 1 Tablespoon Sesame Oil
  • 1 teaspoon Sugar

Preparation

In a small bowl, whisk together the sauce ingredients.

In a large nonstick pan, heat olive oil over medium high heat. Once oil is heated, add garlic and broccoli. Cook for less than a minute, drizzle soy sauce and Sriracha over broccoli and stir around. Continue cooking, stirring regularly, for about 7 to 8 more minutes, until broccoli is tender.

Add shrimp to hot pan, cooking for about 2-3 minutes on each side. Cook until shrimp turns opaque and is just cooked through.

Reduce heat in pan to medium low and add in the sauce mixture. Mix until broccoli and shrimp are well coated. Then add cooked soba noodles to the pan and stir until they are also well coated.

Serve, garnishing with scallions and sesame seeds. Also, feel free to garnish with more Sriracha if you want to turn up the spice!
