Description

This is a great recipe for the family, a girls’ night or just because you are craving something yummy. Everyone I’ve made this for loves it!

Ingredients

  • 12 ounces, weight Chicken Breast, Boneless, Skinless
  • ½ cups Sliced Green Onions
  • 2 cloves Garlic, Minced
  • 2 Tablespoons White Vinegar
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon Olive Oil
  • ½ teaspoons Crushed Red Pepper
  • ¼ teaspoons Black Pepper
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Cornstarch
  • 16 ounces, weight Italian Bread Crust
  • ½ cups Monterey Jack Cheese, Shredded
  • ½ cups Mozzarella Cheese, Whole Milk, Shredded
  • 2 Tablespoons Sliced Almonds, Toasted

Preparation

1. Rinse chicken and cut into ½ inch pieces.

In a large mixing bowl combine ½ of the green onions along with the garlic, vinegar soy sauce, 1 T olive oil, red pepper, and black pepper. Add chicken pieces, stir to coat, and let stand at room temp. for 30 minutes. Drain, reserving liquid.

2. In a large skillet, heat the 1 T olive oil, add chicken pieces and cook for about 3 minutes or until chicken is no longer pink. Stir cornstarch into reserved liquid. Add to skillet and cook and stir until thickened and bubbly.

3. Spoon evenly over bread shell on baking sheet. Sprinkle with cheese. Bake uncovered in a 400° oven for 12 minutes. Top with remaining onions and almonds. Return to oven for 2 more minutes.
