Description

The spiciness and smokiness of the chipotle tastes amazing with the sweet grilled pineapple. A perfect combination of smoky-spicy-sweet goodness!

Ingredients

  • 3 cloves Fresh Garlic, Smashed And Peeled
  • 2 whole Chipotle Peppers In Adobo Sauce
  • 2 teaspoons Reserved Adobo Sauce
  • 1 whole Lemon, Juiced
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Paprika
  • 1 Tablespoon Fresh Cilantro, Or More To Taste
  • 1 teaspoon Kosher Salt
  • ½ teaspoons Cracked Black Pepper
  • ¼ teaspoons Crushed Red Pepper Flakes
  • ¼ teaspoons Cayenne Pepper
  • 1-½ pound Fresh Shrimp, Peeled And Deveined
  • Soaked Wooden Or Metal Skewers
  • 8 slices Fresh Pineapple (optional)
  • 2 cups Cooked Rice (optional)

Preparation

Note: you should soak your skewers in water for up to 60 minutes before grilling!

In a food processor combine the garlic, chipotle peppers and sauce, lemon juice, olive oil, paprika, cilantro, kosher salt, black pepper, red pepper flakes, and cayenne pepper. Pulse a few times to combine and make a paste.

In a large bowl or plastic bag place the cleaned shrimp. Pour the marinade/paste over the shrimp, and mix well to thoroughly coat. Marinate for 20 minutes.

Preheat an outdoor grill for medium-high heat.

Remove the shrimp from the marinade, and discard the excess marinade. Thread about 6 shrimp per skewer, and grill on the preheated medium-high grill until the shrimp turn pink and opaque in the center, about 2-3 minutes per side. You can also cook the pineapple slices at the same time, cooking until pineapple is softened and caramelized on both sides.

Serve on top of your favorite type of rice!

Loved this! Lots of heat but was nicely balanced with the grilled pineapple and rice. Will definitely make again!

The shrimp came out lovely! It was spicy and delicious!
The grilled pineapple gave the dish a nice twist paired with the shrimp. I served it over fluffy white rice. This dish is great, simple and very easy to throw together. I will be making it often!
