Spicy, Cheesy, Tomato-ey Chicken

Description

Cheese and spicy tomatoes stuffed inside a delicious piece of chicken breast.

Ingredients

  • 5  Roma Tomatoes
  • ¾ Tablespoons Roasted Red Peppers
  • Black Pepper And Seasoned Salt, To Taste
  • 2 pieces Skinless/boneless Chicken Breasts
  • 2 sticks Mozzarella And Cheddar Swirled String Cheese (any Kind Of Cheese You Want To Use)

Preparation

1. Preheat oven to 350*F. Spray your baking pan (or tray) with cooking spray.

2. Cut the tomatoes into quarters.

3. Toss tomatoes with 3/4 tablespoons roasted red peppers and a teaspoon or less of black pepper and seasoned salt (or just eye-ball it like I did).

4. Flatten each chicken breast to 1/4 inch thickness (place the breasts between two sheets of plastic wrap and use a mallet to flatten). Cut each chicken breast in half making four pieces.

5. Cut the string cheese sticks into pieces (however thick or thin you’d like the pieces to be).

6. Place tomatoes and cheese onto each chicken breast piece. (I put about 3-5 of each unto each chicken breast, but it depends on how big the slices of chicken breast are). Then roll up and secure each piece of chicken with toothpicks.

7. Place the chicken breasts on baking pan/tray. Pour the remainder of the tomatoes and cheese slices on top of the chicken. Season with black pepper and seasoned salt. (I again eye-balled this too.)

8. Bake for about 30-35 minutes. Remove from the oven and let sit for ten minutes. Very important: Don’t forget to remove the toothpicks before serving!!! (Throw toothpicks into trash.)

Serve with whatever side items you would like to. I served mine with rice.
