Description

The perfect shrimp tacos! The robust spice of the juicy shrimp is perfectly complemented by the sweet succulent flavor of red shrimp from Argentina. Add in some pan warmed tortillas and some delectable toppings and you have yourself a delightful meal. This recipe easily doubles or triples for more servings.

Ingredients

  • FOR THE TACOS:
  • 3 Tablespoons Coconut Oil For Frying
  • 4 cloves Garlic, Minced
  • 1 whole Small Onion, Thinly Sliced
  • 1 pound Frozen Uncooked Shrimp, Peeled And Deveined, Defrosted A Bit
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • 1 teaspoon Cajun Seasoning, Or To Taste
  • 1 teaspoon Cayenne Pepper
  • 1 package Tortillas, Heated (8 Count Package)
  • 1 whole Avocado, Peeled, Pitted, And Diced
  • FOR SERVING:
  • ¼ cups Sour Cream Or Plain Greek Yogurt
  • ¼ cups Salsa
  • ½ cups Lettuce, Shredded Or Torn
  • ½ cups Shredded Cheese

Preparation

1. Prepare your serving line by filling ramekins with sour cream or plain Greek yogurt, salsa, shredded lettuce and cheese. Set aside.
2. Heat coconut oil in a pan on high heat
3. Mince garlic and slice onion. Add this into the pan and cook until garlic begins to brown.
4. Add shrimp, salt, pepper, Cajun seasoning and cayenne pepper to the pan. Stir continuously, cooking for just a few minutes until shrimp is springy, pink and cooked through (don’t overcook it).
5. Transfer the shrimp mixture to a cutting board in small batches. Rough chop and transfer to a bowl for serving. Pour the liquid from the pan and board on top of the shrimp once all of it has been chopped.
6. Heat tortillas and dice avocado. Transfer diced avocado to a ramekin for serving.
7. Assemble taco and enjoy!
