Description

Don’t be scared away by the long name—these burgers are super easy to make, absolutely delicious, and vegan!

Ingredients

  • FOR THE BURGERS:
  • 7-½ ounces, weight Black Beans
  • ½ cups Roasted Butternut Squash
  • 1 Tablespoon Shallot, Diced
  • 1 clove Garlic, Diced
  • 1 whole Green Onion, Chopped (green Part Only)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1-½ teaspoon Cayenne Pepper
  • 1 Tablespoon Lime Juice
  • ¼ cups Panko
  • FOR THE SLAW/SAUCE
  • 2 whole Broccoli Stems, Thinly Sliced
  • 1 whole Carrot, Thinly Sliced
  • 2 whole Green Onions, Chopped
  • ¼ whole Red Onion, Sliced
  • 5 whole Almonds, Thinly Sliced
  • 2 Tablespoons Water
  • 1 Tablespoon Soy Sauce
  • 1 teaspoon Brown Sugar
  • 1 teaspoon Peanut Butter
  • ¼ teaspoons Chili Paste
  • ½ teaspoons Lime Juice

Preparation

For the burgers:

Mash beans and butternut squash together in a bowl until combined.

Add shallot, garlic, green onion, salt, pepper, cayenne pepper, and lime juice and mix well, adjusting seasonings to your own preference.

Add panko and combine until burgers become sticky.

Form patties, fry immediately and serve with peanut veggie slaw (below), or freeze for later, and enjoy!

For the slaw/sauce:

In a large bowl, combine broccoli, carrot, green onion, red onion, and almonds.

In a separate bowl, add water, soy sauce, brown sugar, peanut butter, chili paste, and lime juice. Mix well.

Add sauce to the slaw,and combine.

Serve on top of the spicy black bean and butternut squash burgers and enjoy!

Pretty good! The flavor of the slaw goes really well with the burgers. I would add 1/2 the amount of salt and maybe more breadcrumbs; other than that, they were delicious!
