Description

A spicy filling packed with veggies, low in fat so it’s perfect for that New Year’s resolution to eat healthy this year!

Ingredients

  • 1-¼ pound Ground Turkey
  • 1 whole Green Bell Pepper, Chopped (about 1 Cup)
  • 4 ounces, weight Mushrooms, Chopped
  • ½ cups Onion, Chopped
  • 1 clove Garlic, Minced
  • ½ teaspoons Ground Cumin
  • 1 cup BBQ Sauce
  • ½ cups Ketchup
  • 1 teaspoon Hot Sauce
  • 1 Tablespoon Worcestershire Sauce
  • 6 whole Hard Rolls, Split And Hollowed Out

Preparation

1. Brown turkey in a nonstick skillet over medium high heat. After about 7 minutes, drain the liquid off and return the meat to the pan. Cook another 3 to 5 minutes or until browned. Drain and set aside.
2. Add bell pepper, mushrooms, and onion to the skillet and cook about 3 minutes. The onions and/or mushrooms should be softened. Add the garlic and cumin; cook another minute.
3. Add the turkey back to the veggies, then stir in the BBQ sauce, ketchup, hot sauce, and Worcestershire sauce. Cook, stirring often, until heated through (about 5 minutes).
4. Spoon mixture into hollowed out rolls (makes it a bit less messy) and serve with your favorite baked chips!

My kids who rarely clean their plates, gobbled this up. I asked them to rate it on a scale of 1-5 and they gave it 4 stars because “it’s not steak or crab legs (their fave) but it’s really good”. I’ll definitely be adding this to my menu rotation. And bonus points for being so quick, easy, and secretly healthy! Thanks for a great recipe!
