Description

Ridiculously cold weather = comfort foods. At least in my book it does! And comfort food that has a little kick does an even better job of warming us up from the inside. I like to serve mac & cheese with sauteed chicken bites, or a spiral ham. So good!

Ingredients

  • ¾ pounds Penne, Cooked Until Almost Al Dente
  • 16 ounces, weight Cheddar Cheese, Divided (Half Of It Diced, And The Other Half Shredded)
  • 8 ounces, weight Pepper Jack Cheese, Diced
  • 2 teaspoons Flour
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • ½ teaspoons Ground Cayenne
  • ½ teaspoons Dry Mustard
  • ½ teaspoons Garlic Powder
  • ½ teaspoons Onion Powder
  • ⅛ teaspoons Fresh Ground Nutmeg
  • 4 Tablespoons Sour Cream
  • 1 whole Large Egg, Beaten
  • 1-½ cup Heavy Cream
  • ½ cups Lowfat Milk
  • 1 cup Panko Bread Crumbs
  • 2 Tablespoons Butter, Melted

Preparation

Butter a 9×13″ baking dish. Stir together the partially cooked pasta and both of the diced cheeses and pour into the dish.

In a medium bowl, stir together the rest of the ingredients, except for the shredded cheddar, the panko and the melted butter. Pour over the noodles in the baking dish.

Sprinkle the shredded cheddar over the pasta. In a small bowl, stir together the bread crumbs and melted butter and sprinkle over the cheese.

Bake in a preheated 350-degree oven for about 45 minutes, until cheese sauce is bubbling and the topping is golden brown!

I actually took the time to register just so I could comment on this recipe. If you like your mac and cheese creamy, this probably isn’t the dish for you. However, if you like chewy, chunks of cheesy bliss, this recipe ROCKS! I was worried the pepper jack cheese plus the cayenne would make it a bit too spicy for my tastes, but it’s really not too hot at all and I’m not a big fan of hot. It’s PERFECTION in my book, and as a bonus super easy to prepare. EXCELLENT!
