Description

To-die-for family recipe from my grandma. Turkey sausage, fat free cottage cheese and whole-wheat noodles make this tasty dish easier on the thighs.

Ingredients

  • 1-½ pound Hot Italian Turkey Sausage
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 clove Garlic, Minced
  • 2 Tablespoons Parsley Flakes
  • 1 Tablespoon Basil
  • 2 teaspoons Salt (optional)
  • 1 can (28 Oz. Can) Hunt's Tomatoes
  • 6 ounces, weight Tomato Paste
  • 10 ounces, weight Stone Ground Whole Wheat Lasagna Noodles
  • 2 whole Eggs, Beaten
  • ½ cups Parmesan Cheese
  • 24 ounces, weight Fat Free Large Curd Cream Style Cottage Cheese
  • 1 pound Mozzarella Cheese Sliced Thin (lower Fat If You Can Find It)

Preparation

1) Brown meat in oil and add the next 6 ingredients (garlic, 1 tablespoon parsley, basil, salt, canned tomatoes and tomato paste). Simmer uncovered until thick, about 1 hour, stirring occasionally.

2) Bring water to a boil; cook noodles. Drain and rinse in cold water (I usually lay them out on a paper towel and then wipe them down to catch any excess water).

3) Meanwhile, combine cottage cheese, remaining 1 tablespoon of parsley, eggs, and Parmesan in a separate bowl. Refrigerate until meat mixture is done.

4) When meat mixture is finished, add the first layer of noodles to a 9×13 pan. Spread half of the cottage cheese mixture onto the noodles, followed by half of the mozzarella slices and top with half of the meat mixture. Repeat (two layers total).

5) Bake for 50 minutes at 350 degrees. Check for doneness at 45 minutes.
