Flavourful and tasty, this dish takes very little work. I like how simple it is as it takes only a handful of ingredients and the rest of the work done by the heat. I let it braise as I prepped my other dish.
1. Brown the chicken thighs both sides in high heat for about 2 minutes each side and dish up.
2. Fry the garlic cloves and spices until the fragrance is released, about 1 minute.
3. Pour in the soy sauce, dark soy and palm sugar and let the sugar melt. Add the water in and let the sauce simmer.
4. Put in the chicken thighs again. Leave it simmering in low heat and cover the pan. Turn every 15 minutes.
5. After an hour, check for doneness and dish up chicken thighs. There will be more sauce than needed so you can save the extra sauce for another time (I saved mine for fried vermicelli!).
6. Leave about 3-4 tablespoons of the sauce in, add a dash of pepper and let it simmer over high heat until thickened. (Remember to taste the sauce and adjust accordingly, adding more salt or sugar if needed, etc.) Spoon the thick glossy sauce on the chicken thighs and serve. Yummy over rice or noodles.

This sounds good, fast and easy, think I will try it with chicken legs, I like those better than thighs. Thanks for sharing.
