Description

Cheesy pasta casserole with diced Spam.

Ingredients

  • 1 can Cheddar Cheese Soup (condensed)
  • 1 can Cream Of Mushroom Soup (condensed)
  • 4 cups Milk
  • 3 cups Colby Jack Cheese, Shredded, Divided
  • 1 can Spam
  • 1 package Rotini Or Farfalle Pasta (tricolor Is Okay)

Preparation

Preheat oven to 350 degrees.

Mix soups, milk and 1 cup shredded cheese in a large mixing bowl. Open, rinse and drain Spam. Dice into 1/2 inch cubes and add to mixing bowl. Add uncooked pasta to mixing bowl and mix together.

Note: A mixer is a bit overkill for this, so I just use a ball whisk because it doesn’t catch the pasta pieces.

Pour entire mixture into a large greased casserole dish. I use Olive Oil pan spray and it gives a little extra flavor, but use whatever you prefer. Cover with casserole dish lid or aluminum foil and bake for 60 minutes. Remove from oven and remove lid/foil. Spread remaining shredded cheese over the top and return to oven uncovered for an additional 15 minutes.

Let it sit for about 10 minutes before you dig in!

OMG, I’m so gald to see someone else using Spam!! And Spam casserole – total comfort food! I’m glad someone posted this cause this should be an institution in every household!

We use rice instead of noodles, but this Is a family fav. as casseroles go

Very tasty! Easy to make and would be very adaptable to using different cheeses for example. I might try this next time with some seasoned breadcrumbs on top or when I have left over ham or chicken. Definitely a keeper!
