This is a great side dish for chicken piccata.
Saute the bread crumbs in 3 T oil over moderate heat. Set aside.
Cook pasta. While it is cooking, combine the remaining olive oil, melted butter, shallots and herbs in a large serving bowl.
When pasta is cooked and drained, add to herb mixture.
Stir gently, then sprinkle with bread crumbs and Parmesan.
I prefer to use a 9 x 13 container so that the bread crumbs and cheese are more widely spread.
You can keep warm for 15-20 minutes in a 200 degree oven or warming drawer without ruining it!
