Fire roasted tomatoes, Italian sausage, onion, garlic, and the beauty of herbs combine to make a deep, rich, flavorful sauce.
Over medium heat, cook the sausage, onion, and garlic together in a deep frying pan or a saucepan. If you choose to use red pepper flakes, add them while you are cooking the sausage. (I add just a light sprinkle. Don’t use it if the sausage is a spicy Italian sausage.) Drain the grease from the pan. Add the crushed tomatoes, tomato sauce, basil, oregano, parsley, garlic powder, and onion powder. Stir and bring to a simmer over medium heat. Put a lid on the pan and simmer for about 30 minutes, stirring occasionally. Adjust seasonings and add salt if needed.
While the sauce is simmering prepare the spaghetti noodles according to package directions. Don’t forget to salt the water! When it’s done, drain the pasta.
To serve, top a plate full of the pasta with sauce. Sprinkle with Parmesan cheese if desired. (As if I needed to tell you to do that part.)
