Description

Delicious, rich, satisfying, perfect. Spaghetti and Meatballs will make anyone smile.

Ingredients

  • Meatballs:
  • ¾ pounds Ground Beef
  • ¾ pounds Ground Pork
  • 3 cloves Garlic, Minced
  • ¾ cups Fine Bread Crumbs
  • 2 whole Eggs
  • ¾ cups Freshly Grated Parmesan
  • ¼ cups Flat-leaf Parsley, Minced
  • ¼ teaspoons Salt
  • Freshly Ground Black Pepper
  • Splash Of Milk
  • ½ cups Olive Oil
  • Sauce:
  • 1 whole Yellow Onion, Diced
  • 3 cloves Garlic, Minced
  • 1 whole (28-ounce) Can Whole Tomatoes
  • 1 whole (28 Oz. Size) Crushed Tomatoes
  • ½ cups White Or Red Wine (optional)
  • ¼ teaspoons Salt
  • 1 teaspoon Sugar
  • Freshly Ground Black Pepper
  • ¼ cups Flat-leaf Parsley, Minced
  • 8 whole Fresh Basil Leaves, Chiffonade (optional)
  • 2 pounds Spaghetti, Cooked To Al Dente

Preparation

To make the meatballs, combine meat, garlic, breadcrumbs, Parmesan, eggs, salt, pepper, parsley, and a splash of milk in a mixing bowl. Mix together well with hands. Roll into 25 1 1/2-inch balls and place on a cookie sheet. Place cookie sheet into the freezer for 5 to 10 minutes to firm up.

To brown the meatballs, heat olive oil in a heavy pot or large skillet over medium-high heat. Add meatballs 8 at a time, turning to brown. Remove and drain on a paper towel after each batch. Set meatballs aside.

In the same pot, add the onions and garlic and cook for a few minutes, or until translucent. Pour in whole tomatoes, crushed tomatoes, and wine, if using. Add salt, pepper, sugar, and parsley. Stir to combine and cook over medium heat for 20 minutes.

Add meatballs to pot and stir in gently. Reduce heat to a simmer and cook for 30 minutes, stirring very gently a couple of times during the simmer.

Just before serving, stir in basil if using.

Serve over cooked spaghetti. Sprinkle with extra Parmesan.

THE BEST MEATBALLS EVER!!!!!! I had to shout that out for all to read. This recipe will be the only one I use from now on. If it wasn’t good enough with the spaghetti and it was, I fixed my hubby a meatball sub to take to work the next day. He was so impressed that he said I could make them any day of the week for him. Excellent, tasty food is great and Ree, you give us the best recipe.

These were SO easy and SO delicious! I used 1 pound of ground turkey and 1/2 pound of sausage to lighten it up – worked great!

I made this tonight, and really enjoyed it! However, when I make it again, I think I will add a few chili peppers (husband’s request :) and reduce the amount of oil because I found it had an olive-oily taste. Thanks for the great recipe, Ree!

This was so great! And it makes a lot! My husband and I ate our fill and then had enough left over to have it again later in the week (and it keeps well, too!).

Just reviewing the meatballs because I use another marinara sauce recipe. The meatballs were tender, flavorful and super easy to make. I mixed all together, shaped meatballs and then broiled about 5 min per side instead of pan frying. I then added to my sauce and cooked another 1 1/5 hours. Excellent!

We loved this! No changes necessary. I ended up using 1 lb beef and 1/2 lb pork. I think any combination would be great. Don’t skip french bread.

My husband is not a meatball fan but I am and I was being a bit selfish today so I made this for dinner. My husband just crumbled his meatballs to make a meat sauce and was perfectly happy camper. The tip about freezing the meatballs before cooking was fantastic. I added a smidge of tomato paste and a bit more wine and additional Italian seasoning. Great recipe that I will make again.
