My original review follows – just wanted to give this the official 5 Mitts! I’ve made it several times since this review and it’s always good – “Absolutely delicious! I made this last night for my family and everyone raved over it. I ended up cutting the chicken into bite sized pieces and used the whole packet of taco seasoning to rub into the chicken…and I got a little carried away with the cheese at the end and added more. I used Old El Paso salsa and taco seasoning. The one hour and 15 minute cook time worked perfectly for me as well. The green onions were the perfect finish – plus we added a small dollop of sour cream to our plates. Thank you for such a great recipe! It’s so easy to prepare and we’ll be having it again very soon.”

I made this last night, and it was so easy, which is a plus with a 4-month-old in the house. I think next time I’ll use low-sodium products, as it was a little salty, which I think was the fault of the taco seasoning I used. Other than that, it was really yummy, and my husband said it was delicious, too. Thanks for the recipe!

This is super easy and absolutely delicious!! I used a whole packet of taco seasoning on the chicken and forgot completely to add the corn, but it was still really yummy!

This is excellent! I cut the chicken into bite size pieces before cooking & then we scoop it into tortillas to eat. Thumbs up from all three of my kids!

I like this casserole; it’s pretty healthy and has good flavor. We tend to like things a little spicy around here so next time, I think I’ll dice up a jalapeno and put it in the mix with the corn and rice. It’s a good weeknight meal.

I didn’t have any chicken available for this the night I was trying to make it, so I just added more veggies. Turned out great. Very easy and quick to make.

Great recipe! I made this last weekend and it was a hit. I too, cut the chicken into bite size pieces. Wil definitely make this again!
