Description

This is such a hearty soup, and even better, it’s quick. Just throw everything in the crockpot and let it be! Can’t get simpler then that!

Ingredients

  • 2 whole (8 Oz. Size) Boneless, Skinless Chicken Breasts
  • 1 can (15 Oz. Size) Black Beans
  • ½ cups Frozen Corn
  • 2 cups Low Sodium Chicken Broth
  • 1 can (28 Oz. Size) Diced Tomatoes
  • 1 can (4 Oz. Size) Diced Green Chiles
  • ½ whole Bell Pepper, Diced
  • ¼ teaspoons Cumin
  • ¼ teaspoons Garlic Powder
  • ¼ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • 2 Tablespoons Taco Seasoning
  • 1 dash Cayenne Pepper

Preparation

Put the chicken breasts in the crockpot, add the rest of your ingredients and stir. Put the setting to low for 8–10 hours or on high for 3–4 hours.

About an hour before it’s done, take two forks and shred the chicken. It’s simple; the chicken will just fall apart. When done, serve with some reduced fat Mexican cheese!

Makes about 8 cups. Enjoy!

Made this for a small sandwich shop that I make soups for weekly and boy did it get rave reviews. It was loved by all. Had several people ask for the recipe including some men who wanted to give to their wives to make at home.

This was amazing!! I used 3 chicken breasts and crushed tomatoes. I left out the green chiles and used chili powder b/c I didn’t have taco seasoning. It was so easy and surprisingly flavorful and delicious! I grated some cheddar on top and had a dollop of sour cream. Going in my regular rotation of recipes!
