Description

Moist and full of flavor, I don’t cook this often but it’s one of my favorite comfort foods.

Ingredients

  • FOR THE MEATLOAF:
  • 1 whole Small Onion, Diced
  • 1 stalk Celery, Diced
  • 1 whole Bell Pepper, Stem And Seeds Removed, Then Diced
  • 1 pound Ground Beef
  • 1 teaspoon Salt
  • ½ teaspoons Pepper
  • 1 whole Egg, Beaten
  • ½ cups Milk
  • 2 slices Bread, Torn Into Pieces
  • 1 can Tomato Paste (6 Oz Can)
  • ¾ cups Dark Karo Syrup, Or More (up To 1 Cup) If You Like It Sweeter
  • FOR THE TOPPING:
  • ½ cups Ketchup - (Enough To Cover Top)
  • 1-½ Tablespoon Bread Crumbs
  • ½ cups Durkee's French Fried Onions (Optional) For Top

Preparation

1. Preheat oven to 350 F. Saute the onions, celery and bell pepper in a skillet over medium heat. When they are softened and translucent, remove skillet from heat.

2. Sprinkle salt and pepper over meat in a large bowl.

3. In a small/medium bowl, mix the egg, milk and bread together.

4. Mix the bread mixture into the meat.

5. Mix the onion, celery, bell pepper, tomato paste and Karo syrup into the meat.

6. Transfer to either a casserole dish or a non-stick loaf pan. I use a non-stick loaf pan by “Wilton”. It’s a 9 x 5 x 2 inch (roughly) pan with another inside pan that has holes in the bottom to let grease run out.

7. Spread ketchup over the top of the loaf.

8. Sprinkle bread crumbs over top.

9. Optional: A few Durkee’s onions on top is a yummy extra!

10. Put into the 350 F oven for 45 minutes to 1 hour.
