Description

This dish makes its own gravy, which is great over rice. We eat it with saffron rice, with carmelized onions mixed in. It can also be made vegetarian style if one uses Quorn Naked Cutlets.

Ingredients

  • 4 whole Chicken Breasts (boned, Skinned, Halved)
  • 3 Tablespoons Butter
  • 1 clove Garlic, Crushed
  • 1 teaspoon Paprika
  • 1 cup Sour Cream
  • ¼ cups Mayonnaise
  • ⅓ cups Shredded Parmesan Cheese

Preparation

Preheat oven to 375 degrees. Salt and pepper the chicken. Melt butter in a 9×13 glass baking dish. Mix in garlic and paprika. Place chicken in the dish and turn to coat. Cover loosely with foil and bake for 30 minutes. Remove from the oven, mix the sour cream and mayo together, and pour over the chicken, coating each piece. Cover again with foil and bake for 20 minutes more. Remove from the oven, sprinkle cheese over all and broil until golden.

If using a vegetarian alternative, be sure to add 2-3 times extra fat in the form of butter or oil, else you will not get the sauce to come out.
