Description

I was leery because this began as a ‘healthy’ alternative to the Mexican food I always crave. Have faith ladies, I found a way to make it unhealthy by adding the cheese! This is a repeater in our house. I go the easy route and use packaged Spanish rice, but if you have your own recipe, go for it!

Ingredients

  • 4 pieces Boneless Chicken Breast
  • 4 Tablespoons Taco Seasoning
  • 1 cup Chunky Salsa
  • 10 Tablespoons Fat Free Ranch Dressing
  • 1 whole Lime, Juice Only
  • 6 ounces, weight Shredded Cheese
  • 15 ounces, weight Canned Black Beans
  • 1 package (about 6-8 Oz. Package) Spanish Rice, Or Brown Rice If Preferred
  • Black Olives
  • Green Onion

Preparation

1. Place chicken breast and taco seasoning in a Ziploc bag, ‘smooshing’ around to coat chicken.

2. Spray skillet with nonstick cooking spray and heat to medium heat.

3. Brown chicken on both sides.

4. In a bowl, combine salsa, ranch dressing, and lime juice.

5. Pour salsa mixture over chicken and top with shredded cheese.

6. Reduce heat, cover skillet, and simmer for approximately 10 minutes.

7. Layer prepared (cooked) Spanish rice (or brown rice if you want to go that route), black beans, and chicken breast. Spoon additional sauce over rice, beans, and chicken.

8. Garnish with black olives and green onions, or whatever you little heart desires!
