Description

30 minutes start to finish and dinner will be on the table.

Ingredients

  • 1-½ cup Scallions, Chopped
  • 2 Tablespoons Ginger, Chopped
  • ¼ cups Cilantro, Chopped
  • 3 Tablespoons Sesame Oil Plus 1 Teaspoon, Divided
  • 1 Tablespoon Soy Sauce, Plus More To Serve
  • 2 Tablespoons Rice Vinegar
  • 2 Tablespoons Honey
  • 1 teaspoon Chili Garlic Sauce
  • 6 ounces, weight Soba Noodles
  • 4 ounces, weight Sugar Snap Peas, Thinly Sliced
  • 2 wheels Small Cucumbers, Julienned
  • 2 Tablespoons Toasted Sesame Seeds
  • 1 whole Lime, Cut Into Wedges

Preparation

1. In a bowl combine scallions, ginger, cilantro, 3 tablespoons sesame oil, soy sauce, rice vinegar, honey, and chili garlic sauce. Let sit for 10-15 minutes for the flavors to develop.

2. Prepare soba noodles according to package directions, making sure not to overcook them. In a pan heat remaining 1 teaspoon sesame oil over medium-high heat. Add sliced sugar snap peas and cook for a few minutes.

3. Toss the noodles with the cucumbers, sugar snap peas and sauce. Top with sesame seeds and a drizzle of soy sauce and lime juice.
