Description

Smoked Gouda Mac and Cheese from A Cozy Kitchen is a dressed up version of your favorite comfort food.

Ingredients

  • 1 pound Short Pasta
  • 4 Tablespoons Butter
  • 4 Tablespoons Flour
  • 4 cups Milk
  • ½ teaspoons Salt
  • ½ teaspoons Black Pepper
  • ½ teaspoons Paprika
  • 2 cups Grated Sharp White Cheddar Cheese
  • 2 cups Grated Smoked Gouda Cheese

Preparation

Cook the pasta according to package directions, set aside.

Melt butter in a large saucepan over medium-low heat; whisk in flour until smooth. Continue whisking and cook for 2 minutes. Gradually whisk in milk. Whisking constantly, cook for 5 minutes or until thickened. Reduce heat to low and stir in salt, black pepper and most of the cheese, reserving about a cup of cheese.

Pour the pasta in a lightly greased 8 x 11 x 2 baking dish. Spoon the cheese sauce over the pasta, stirring lightly to even out the sauce in the pan. Sprinkle the top with the remaining cup of cheese and the paprika.

Bake at 400° for 20 minutes or until bubbly. Remove from the oven, and prepare yourself for out-of-this world macaroni and cheese.

This was really tasty. I used more of the smoked gouda that called for and omitted the sharp cheddar (not on purpose). It was even better as a leftover the next day.
Nest time I will make it as the recipe specifies.

I’ve made this three times for my family now, and it is definitely a hit. It is easy to make, and I can be working on a main course while this is in the oven. This one is a keeper.

I made this last night for my friends and while I probably should have added more salt and pepper (and I have now considered tossing in some paprika into the cheesy sauce) it was delicious! It was pretty simple to make, and was definitely a crowd pleaser. I even have more than enough for leftovers, which is always nice!
