Description

Just in time for St. Patrick’s Day, a beef stew that will go perfect with either green beer, or the rest of the Smithwick’s.

Ingredients

  • ¾ cups Flour
  • 1 teaspoon Garlic Powder
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1-¼ pound Stew Beef, Cut Into Chunks
  • 2 Tablespoons Olive Oil
  • 2 bottles Smithwick's Beer, Divided
  • 4 cups Beef Broth
  • 1 pound Baby Carrots, Sliced In Half
  • 1-½ pound Small Red Potatoes, Scrubbed And Cut Into Fourths
  • 1-½ Tablespoon Thyme
  • 1-½ Tablespoon Parsley
  • 2 pieces Bay Leaves
  • ¼ cups Instant Mashed Potatoes
  • ½ packages Frozen Peas (12 To 16 Ounce Package)

Preparation

NOTE: The beer brand is pronounced Smit-ick’s. I thought I should tell you, lest you order it at an Irish pub and sound like a complete fool! Just trying to help!

Combine flour, garlic powder, salt and pepper in a bowl. Cut your beef into chunks. Cover the pieces of beef in flour mixture and put into a Dutch oven with olive oil. Cook half at a time, on medium-high heat. Brown the pieces and put onto a plate as they are browned. Continue with second half of beef pieces. Once the second half has been browned, place those pieces onto the plate as well and pour one bottle of Smithwick’s into the Dutch oven to deglaze it. Let simmer for a few minutes.

Pour the four cups of beef broth into a crockpot. Add the browned beef, baby carrots, potatoes, thyme, parsley, and bay leaves to the crockpot.

Once the beer has simmered for a few minutes in the Dutch oven, pour it into the crockpot. Add one more bottle of beer to the crockpot. Stir and cover.

Cook on low for 7.5 hours. After 7.5 hours, add the package of frozen peas and the 1/4 cup of dry instant mashed potatoes and stir to thicken stew. Cook an additional 30 minutes on high. Salt and pepper as needed.

Enjoy with homemade french bread and some Irish beer!

I made this with chicken last night (I don’t eat mammals) and it was really good. It did need some salt, though.

I was so excited to try this recipe and I had a bunch of friends over last night for the football game, so I thought this would be great. I rarely modify a recipe the first time I make it, so that I fully experience what it is supposed to bebefore I make any alterations. However, when I went to put in the thyme I thought, god that seems like A LOT. I was correct. It overpowered the whole meal. Also, as someone else stated it needed some additional salt. I think the potential is there but definitely needs some altering. If I made it again I would use a small fraction of the thyme and add some more salt.

This was great! I added chopped button mushrooms, because my family is crazy about mushrooms + beef.

Sadly I could not find Smithwick’s here… so after some Googling, I bought Guinness STOUT (not lager). The 1 pint 6oz (22oz) bottle I found in my Safeway store was perfect, although the original recipe here calls for two bottles of Smithwick’s and from what I could find on Google, they are 12oz each standard.

Loved this recipe. Would suggest decreasing the amount of thyme and adding a sautéed onion. But overall my family thoroughly enjoyed this recipe.

Can’t believe I forgot to review this one the first time I made it!! It’s super simple and DELICIOUS! I do add frozen pearl onions at the same time as the peas, but that’s simply personal preference. Perfect with french bread and beer. Thanks!!
