Description

My mom perfected this meatloaf, and I have never tasted a better loaf o’ meat. This one is terrific for a working mom: fix it in the morning and slow cook all day. Incredibly juicy. Too good to be slathered in tomato paste.

You know I love you because I’m finally sharing this with you.

Ingredients

  • 2 pounds Ground Beef
  • 1 whole Egg
  • ½ cups Chopped Onion (I Sometimes Add A Bit More)
  • 1-½ teaspoon Salt
  • 1 cup Saltines, Crushed
  • ½ teaspoons Kitchen Bouquet (NO Substitutions! This Ingredient Makes All The Difference. Ask Your Grocer If Necessary.)

Preparation

Mix all the ingredients. I’ve become lazy and throw it all in the slow cooker from the start. Try to mix it with your hands as best as you can. Pack it all into a loaf, as firmly as possible. This is going to get juicy.

The ingredients (like the Kitchen Bouquet) may not look completely distributed. Do your best, but don’t worry. It will look and taste uniform in the end.

Cover and set the slow cooker on high for 4 to 5 hours or on low for 8 to 10 hours.

Personally, I like to cook this on high for a hour or two to get things cooking. I then set it to low for the rest of the day. Once on low, it is very difficult to overcook. Dinner waits for you this time.

If you wish, you may want to remove some juices near the end to help in browning. This juice is an excellent base for homemade gravy.

To remove from the slow cooker, I often cut it in half. Then I put both halves on a platter and cut one half into slices. We rarely touch the second half until the next day.

I made your meatloaf recipe but I baked it instead of using the slow cooker. I took one in to a co-worker and she it was absolutely delicious. My hubby took 2 sandwiches with him to work the next day and raved about it. One of my granddaughter had 3 helping of meatloaf and dinner. Needless to say your recipe was a huge hit. Thank you for sharing and it will be “the” meatloaf recipe in our house from now on.

I made this today and I can’t wait to have my sandwich at lunch tomorrow!! I mainly make meat loaf so I can have sandwiches after it gets cold. This was so easy and delicious. Thanks for sharing.
