Description

A delicious humble stew of beef, potatoes and vegetables comes together beautifully in a slow cooker!

Ingredients

  • 3 pounds Beef Chuck Roast, Cut Into 1" Cubes
  • 5  Medium Carrots, Peeled And Sliced Into 1/2" Diagonals
  • 4  Medium Red Potatoes, Peeled And Cut Into 3/4" Cubes
  • 16 ounces, weight Whole Fresh Mushrooms, Quartered
  • 1  Large Yellow Onion, Chopped
  • 3 cloves Large Cloves Garlic, Minced
  • 4 cups Low Sodium Beef Broth
  • 3 Tablespoons Tomato Paste
  • 2 Tablespoons Worcestershire Sauce
  • ¼ cups Hungarian Sweet Paprika
  • ¼ cups Brown Sugar
  • 2 teaspoons Dry Mustard
  • 2 teaspoons Kosher Salt, Or To Taste
  • ½ teaspoons Freshly Ground Black Pepper

Preparation

Place beef in slow cooker. Cover with carrots, potatoes, mushrooms, onion and garlic.

In a medium bowl, whisk together remaining ingredients, and then add it into the slow cooker. Stir a bit to combine.

Cover and turn heat to high. Cook for 4 to 5 hours, or until beef and veggies are very tender. Serve in bowls with a warm loaf of fresh crusty bread.

I really liked this better than the beef stew I usually make. I did take the time to brown the meat and onions before tossing in the crock pot and threw in a couple of fresh tomatoes and cayenne (we like spicy stew!). Even my husband said I should make this again. Thanks for the delicious recipe!! We did serve ours with some white rice to make it last longer for leftovers.

very good. It was not thick like I thought it would be; it was more soupy. I sure didn’t use that much paprika (it would have cleaned me out) but 1 Tbsp was good!!
